Sometimes, they create “Chinese” dishes that have zero resemblance to any of the plethora of dishes in the various Chinese cuisines.

When I was still in my previous Master’s program, one of my classmates introduced me to “Chinese 3-in-1”, which apparently you can find in nearly all of the Chinese takeaways here.
I was like: what on Earth is a Chinese 3-in-1?

Yup, when my Chinese friends and I saw this dish for the first time, in a Chinese restaurant of all places, we were like WTF.
Like seriously, WTF.

I feel drowsy just looking at pictures of it.
Where are the vegetablessssssssssssss ?

If you grab a plate, and upend the contents of the takeaway container over the plate, you get the visually arresting sight that is:

Chips + Crispy Deep Fried Chicken + Red & Green Peppers + Chili Peppers + Onions + Some Mysterious Spice Mix (hence the name) + Salt, Salt, and a ton of Salt.
All to be washed down with a can of DIET Coke.

“Chinese foods” is one of the world’s most popular cuisines because enterprising Chinese chefs and cooks who move to other countries will redesign, rejig, remake dishes to suit local tastebuds.
Sometimes, as in the examples above, inspiration might strike from onhigh and they might even come up with something completely unexpected…
As an aside, on one of my previous answers, someone referred to the food in the picture below as “Modern Chinese”.
Mmm.
