It depends on what you mean by “at once”. If you mean at any one moment, then
it’s likely just one thing at a time (though it’s hard to judge that when training neural nets as you learn skills without consciously taking every detail in). However, if you’re thinking about how many different subjects you can alternate through over the course of a year as you learn them all “at once”, then you can learn a great many, though progress will be faster if you limit the number of them to just a few because that way you’ll forget less as you go along. Schools spread everything so thin that hardly anything sticks. Three or four things works better than six to eight - that gives you enough to alternate through, switching whenever you get tired of one subject, but it keeps you focused on those tasks with a higher intensity which makes learning a lot more efficient. Seek efficiency of learning over all else.

The sensations, as they reach the brain, are transiently registered in the form of sensory memory and this memory is retained for only a few hundred milliseconds to 1-2 seconds. Sensory memory thus formed may end up in two ways – it can be registered as short-term memory (STM); or it may be lost from consciousness forever . The STM thus formed may also end up in two ways – it may pass into long-term memory; or it may vanish totally. For example, when we look at a number in the telephone directory before starting to dial, the number is temporarily stored for a few seconds and after completing the task it will vanish from our memory (unless a conscious effort is made to remember it, then it becomes long-term memory). The duration of short-term memory storage ranges between 10-12 seconds. Studies have shown that a human being has the capacity to remember about 7±2 items at a given moment (‘the magical number seven’). It is a common knowledge that the fate of STM depends on the attention the perceiver pays – if no attention is paid the memory decays; if conscious effort is made it forms long-term memory.

“How many things are humans capable of learning at once?”
You may have been taught there are 5 basic human perceptions; sight, sound, touch, taste and smell.
There are many more than that; sense of time, sense of location-placement-orientation, position of joints, emotional level, emotions of groups, pain, unconsciousness, and level of consciousness. By surveys in the 1950’s it was found humans have at least 57 sensory perceptions, including reality and imagination. One can distinguish between what is real and what is imagined.
The sense of sight has many parts; wavelengths, different colors. Computer manufactures design for millions of different pixel colors. One advertisement on TV says a human can see a candle at 50 miles, one night I saw Andromeda Galaxy in the night sky - 1.2 million light years away, or so. There is such a thing as 3D sight, depth perception, volume of light. Humans can hear sound from 20 cycles per second to about 20,000 cycles per second.

All of these are recorded at 15 to 150 frxs per second and the mind can put these images together to see visual images in motion, all of these 57 or more human perceptions in motion together. There is also the sense of reality and imagination, one can recall what is real and what is imagined and distinguish the two. One can recall what one has thought, his observations, his decisions, his postulates meaning what he has decided to be and do and have.
Now, one can recall things, and be aware of them, but where was that memory a moment ago, 50 years ago, or 70 years ago, in my case. One can experience, that is one thing. Then one can record that experience, that is a second thing. Now, one can recall a memory now, so that is a third thing. So to distinguish two things here we can say the original record of perception, the one recorded 50 years ago, is called a facsimile. When I wish to recall something from 50 years ago I do not access the original experience, I access the facsimile of that experience. Now, I have a current memory of what happened 50 years ago, that is very incomplete. The facsimile recorded 50 years ago is still there and still perfect. To access that recording or facsimile directly one has know that the mind is organized by time, not by the 5 common senses we learned about. If I want to view in detail what happened 50 years ago, one can say, “Move to 50 years ago.” Let’s say one experienced a birthday 50 years ago. One might recall an imperfect memory of that time 50 years ago, then someone could say, “Move to 50 years ago.” Since your attention was already, there slightly, one’s full attention can now be brought to bear on the facsimile from 50 years ago, the birthday. This is a function of the mind, any human mind. It is called returning or the ability to return to exact facsimiles and view any of the 57 or so perceptions there in any level of detail you wish. The detail is almost infinite.

Here is an example, I asked a man to recall something and he told me he recalled a scene with a forest about 6 miles away. I asked if there were trees in that forest, he said, yes, there were trees there. I asked if he could see one of those trees, he said he could. I asked if he could see the bark. He said he could. I asked if there were insects in the bark. He said there were. He was describing a facsimile with nearly an infinite amount of visual information stored in that one facsimile. I was observing an ability of the human mind that I had never observed before.
Now, I am describing something that is far, far greater than what the human body is capable of, apparently. I am describing the mind of a human being.
Now, one in three million human beings do not record the perception of pain. The sensation of pain is one perception, in the mind, that can block all the other perceptions. So these people have access to all their perceptions, including time. They are a perfect test group to see what the functions and the capabilities of the mind of a human being is. They can recall more than this one life on Earth. They can recall anything they have experienced in this universe. And, that is a lot, lot more than you might think at first. I met two of these people in the early 1970’s. But it is possible to erase the pain in the mind of any human being and restore all of these same capabilities in anyone. This is called a Clear. 10’s of thousands have done just this. The people that come by this naturally, and that have always been this way, are called, Natural Clears. I estimate the IQ of this group of people to be 160+. As it turns out there is a minimum. The minimum IQ of such a person is 135.
It is not true that a human-being can learn only one thing at a time. His or her or your or our capability is far, far greater than anyone has ever told you, before this. The first public release of this information, with the information available at that time, was in a book called, Dianetics: The Modern Science of Mental Health, by L. Ron Hubbard. It is the most popular self-help book ever written, every sold. If you are interested in such things you might want to buy one and read it.

The really neat thing about learning physics and the reason I find it so fascinating is its ability to explain the world around us.
Here is a step by step breakdown:
Be curious. Physics is the study of the laws that govern the universe. Have a look around, I’m sure you’ll see a couple in action. Everything from the rays of sunlight on your skin to the sound of a falling obxt is physics. I’m not expecting you to be able to drive mathematical equations by doing this, just gain an appreciation for the field and know how it matters.
Look for patterns. Try to lix your observations of the world together. You may have noticed that passengers standing on the bus tend to fall forward when the bus is coming to stop. The last time you were on a roller coaster, you distinctly remember begin pushed to one side while the roller coaster was going in circles. Both these observations involve movement and in the opposite direction as your intended travel. Maybe these phenomenons are lixed? Maybe they share a common explanation?

Look for answers. Now once you have seen and tried matching all your observations together, try looking for the answers. No don’t google it! Not yet at least. Ask a friend, a family member or a teacher. Ask someone who you don’t think will have the correct answer. Get a conversation going, discuss different explanations. This is the best way of learning anything. Once you have thoroughly thought about it and knocked your head against it long enough, then look for the correct answer. Now you’ll never forget it!
Read books and get inspired. There is only so much you can figure out by yourself. Now it’s time to tap into the wealth of knowledge discovered by people before you. Textbooks will provide you with the necessary foundation in physics that you will need for higher education, that is you are looking to pursue physics. Books and online lectures are great for getting information across, but they fail in one key aspect. They fail to inspire the same way a human being can. That is why attending courses is important. You need someone who can get your blood rushing about physics. This is what a good instructor can do for you.

Most of this answer is inspired from my Physics professor during my first term at Waterloo. He would never release solutions to previous exams and we would argue with him that we need the answers to study. He would just shake his head and say that the answer is not important. Focus on the steps you take to get to the answer and understand the procedure. Understand it so well that the answer inadvertently has to be correct.

Lots, but the efficiency goes down if you switch between too many as you forget things too easily during the breaks. It’s best to focus on just three or four things and race along with your learning of those while saving up other subjects till later. Often it’s best just to work on one subject while excluding all others so that you can make extremely rapid progress with it, but that depends heavily on maintaining motivation, and motivation can be easier to maintain if you switch between a two or three subjects so that as soon as you overdose on one you can switch to another and let the motivation recover.
I sat in French classes at school for over 3 hours a week, 40 weeks a year, 5 years. That’s an underestimate of it as most years it was 3.5 hours a week, but lets just go with 3x40x5: that comes to 600 hours. At the end of that time I could barely produce a sentence in the language and struggled to make any sense of any text. The teaching was terrible, but it was also dragged out for so long that the rate of forgetting was almost equal to the rate of learning. After leaving school I learned how to learn languages properly by focusing on them one or two at a time to the exclusion of all else, and I would spend 20 to 30 hours in total on each, learning them to a much higher standard than I had with French. That still isn’t enough to make them greatly useful unless you’re learning them due to an interest in linguistics (which was what I wanted them for - I worked on fifty languages in this way in order to get a feel for how they worked in order to try to work out how thought works underneath the surface), but I’ve taken some of those languages a lot further since by reading books in them alongside English translations, and by the time you’ve read one book like that, taking another 50 to 100 hours, you’ve developed the ability to read the language fluently and you’re ready to start learning to speak it. That is the most efficient way to learn languages. All subjects have a most efficient way to learn them, and that way is not used in schools, but the most important learning tool is speed because it gives you less time to forget what you’re learning, so you learn far more in far less time. If you study two many subjects at the same time, you lose that key tool for efficient learning and most of your effort is wasted.
