I can imagine why its only available a few months of the year, A rare delicacy like this used to be food fit for emperors.

Only thing I can think of is how your dad kept mixing up Soju with Suzhou

Love the idea of seasonal menus where a restaurant and customers are acknowledging that food is not always available in a given region and it is ok to not eat the same things 12 months of the year. I hope more and more people understand this; even if they are not growing food theirself.
