I'll say what I really feel, so don't mind if you eat with your hands.
When I see a person eating with their hands in a restaurant, I feel funny, I feel like I'm seeing a baby, you know, a baby that eats with its hands.
But if I see him finish eating and then go and wash his hands and shake my hand, I always worry that he hasn't washed his hands.
In fact the Chinese, Japanese, Koreans and Vietnamese also use their hands when they eat some foods. For example, eating large pieces of meat with bones, oysters, pastries, steamed buns, buns and so on.
But when it comes to eating rice, you certainly don't use your hands.
All I can say is that it is a different culture in a different region.

This question reminded me of my summer intern days. I missed eating Indian food with bare hands.
It was my first job in US and I was still getting use to US corporate life. I was having my daily breakfast and lunch with my office colleagues. All the food was mostly American with odd Mexican and Chinese servings. Since we were interns we were expected to socialize with team members and get to know firms’s culture, hence going to breakfast and lunch with teammates was a norm, not that I didn’t like it, but I was getting bored eating the same American food. It was more than a month and my taste buds were craving for some Indian spices.
One day, me and my friend who was also an intern ( Indian) decided enough is enough today let's give team lunch a miss and get some spicy good Indian food. We use to work in a typical downtown office with big food courts connecting multiple buildings. That day when our team called us for lunch we lied to them saying we are not hungry, we had our breakfast late so we are thinking of going to lunch after sometime. So team said fine let us know if you guys change your plan.

I learned to eat Indian food with my hands almost a decade ago and it is not my habit to eat Indian food with a fork ( though other cuisines I will pick up a fork). I have had many mixed reactions in both India and the US regarding this. In India it is about half and half. Some people praise me for eating Indian food the way it was intended, but many wealthier Indians have told me to stop eating with my hands as it is “ disgusting and low class”. * As a note this is in North India not South India. I spent a few months in South India and there regardless of circumstance it was expected I would eat with my hands. In North India I have encountered many people, especially in Delhi and surrounding areas who react with disdain when they see someone eating with their hands. I even had someone tell me they would get up and leave the table if I wouldn’t stop eating with my hands, no joke I could not make this up. This was actually in a South Indian restaurant in Delhi.

I used to work for a US software company whose development center was being established in India by an American Director. We were still growing and at that time had around 20 members including the front office attendant, houseboy etc. With the team size being so small, we had great rapport and every event in anyone's life was celebrated. Someone bought a car, we had icecream treats. Someone bought a home, sweets would be served at the front desk.
That day I don't remember the reason, but someone in the team was treating us all with Hyderabadi Biryani. We all trickled down in the cafeteria, only to realize that spoons and tissues were missing. So our office boy was sent to fetch these, while we chatted waiting for the spoons to arrive. Just then our American boss entered, finding spoons missing, served himself Biryani, used his hands to dig into the biryani, left the room, came back wiping his hands from the restroom, congratulated the host and went back to his work, while we all Indians were still waiting for the spoons.
To answer your question, the world is shrinking. Interaction and travel across the globe has increased rapidly. Wiser will be those who instead of defining culture ‘my way’ better than ‘their way’ just understand each of the cultures have a ‘different way’. And thankfully this kind of wisdom seems to be on the rise.

I spent several years with Telugus growing up, so eating with hands does not appear strange at all to me now. People in my own country do it with “finger foods”, sandwiches, and other things. Here it is considered rude to lick the fingers (in spite of the KFC motto, “Finger Lickin’ Good”) and I would be astonished to see someone lick their palm. But seeing someone scoop up food with naan or dip in idlis? Not an issue at all.
I will tell you one huge problem that I have, and that is that I'm left-handed. I heard someone the other day say that their non-dominant hand is “purely for ornamental purposes”, and that's true for me too, especially because I have a nerve condition that affects my right side. My right hand can participate in things like typing, or hold a rail, but I am very uncoordinated trying to eat with it. That's a problem in a lot of hand-eating cultures, since eating with the left hand is a big no-no. It's a constant struggle not to use my left hand while I eat, and I'm often really messy with my right. So if you see me sitting on one hand at the table, that's why….I'm trying desperately not to commit the faux pas.

The first time I encountered eating with my hands was with an African family in the US from Senegal. When it was time to eat, the mom laid a large plastic mat on the floor, placed a number of very very large bowls in the center full of steaming food, and we all sat down on the floor around it and ate. They explained to me what I needed to know and I ate myself into a coma! I just considered it an honor to be invited, welcoming a new experience, nothing more.
Many years later when I first encountered eating with hands from an Indian person, he was very apologetic, constantly asked for my permission and asking if it was OK. I repeated that I had absolutely no problem with it, and wanted to learn how to eat the foods that we were preparing together however he could show me. I personally can't digest wheat products so naan is not something I can eat (booooo hoooooo). So I began experimenting with other types of flatbread using tapioca and gram and other flours and came up with some wonderful substitutes I could slather with ghee and eat my dal with. To this day, I instinctively use my hands to eat Indian food and actually tend towards that in many other foods when no one is looking - bonus: less cutlery to wash !

Being a guy from East Asia visited Indian subcontinent regularly, I think I have the credential to answer this, of course anonymously with some reasons.
After 10 years, I’m still feeling sick seeing my friends eat with their fingers.
Some of my points:
Please don’t take it offensive. I respect Indian culture and history, I made lots of friends during the time, some of them I consider best friends. I never judge any behavior or habit difference, except this one.
As a traveler, I used to try eating with hand to get closer to our partners or customers, at least at first meet, but sorry I failed at second try. Now I say sorry first and ask for a spoon to eat dal. “Sorry I love eating with fingers, but I feel easier with a spoon”, I lie.
Of course I eat with my fingers sometimes, pizza, roasted chicken, tandori, rotti and onion, any dry food. Biriyani with dal? Sorry, I need a spoon.

We were taught hands are always dirty. Don’t touch your food, especially wet food. Respect it by using chopsticks and spoons.
“My hands are clean of course!”, I only touch my laptop keyboard, keypad, mouse most of the time, steering wheel, tv remote on a typical day. Man, these things are full of bacteria, even when we wash our hand with soap. I don’t want to wash my hands like a surgeon before eating.
If utensils are not clean, so the food’s clean? If I trust a place enough to eat their food, I trust their spoons too.
Eating today is not only eat and quit, we do multi tasks during meal time. At home we need our hands clean and dry to prepare more dishes, passing this and that, drink. In public we eat and talk and meet, shake hands, writing notes, showing this and that. I can’t spend hours with my fingers full of curry and do other job.
Half-processed material to make dishes and we need fingers tofinish the job? Anything to complete with a hand, we can make it easier with a pair of chopstick or forks.
Touching the food make hands oily, even if we wash it after meals. Some of my friends admit they feel terrible shaking hands of Indian guys, “full of oil!”. “Hey, not only hands, their phone and laptop too!”
I don’t mean to offend anyone or any culture, just tell what I really think. I don’t mean to make you change your habits, but if possible, please use utensils when you’re abroad, because many people may judge you by the way you eat. Trust me, they have terrible comments but they never share them on Quora.

One of the first dates with an Indian guy: He took me to an Indian restaurant because never in my life have I ever had the chance to try Indian food. He took me to a buffet where I could try endless amount of dishes.
When we started eating I noticed he was eating with his hands, which is something I am not used to. My whole family is from Europe and even french fries are eaten with forks!
The guy, with his hands, would rip a piece of naan, grab a chicken and dip it in a sauce, and eat it.
I am already conditioned to wipe my hands on a napkin if food were to touch it. I never felt disgusted, or thought it was weird, just different. I know ppl who eat with chop sticks, which still blows my mind. Eating with hands, forks, chop sticks….Same difference!
It was fascinating to learn about a new culture, BUT when we go out to eat, I will still just rip a piece of naan, eat it….then grab my fork to eat the chicken and rice.

If they're enjoying their food, it feels good to share the moment =] Doesn't matter how they're eating it. It's the experience that matters. I prefer the spoon for eating Indian food, it doesn't mean I have a greater or lesser capacity to enjoy it than someone who eats with their hand. I don't think it's a "dirty" way to eat, since people tend to wash their hands prior to eating. And I know I'll lick food off my hands if I make a mess, so if it doesn't bother me to do it myself, it shouldn't bother me to see others do it.
Side note, for some reason I enjoy using chopsticks to eat food more than forks or spoons (when possible, curry would be pretty difficult to pick up with sticks!), and I'm American. Go figure. I just like the way it feels, it's like a little challenge sometimes to pick up a slippery slice of mushroom or a tiny mound of rice. Also it forces me to eat more slowly, which I prefer since I take my meals as experiences to savor anyway.

I've always been messy, clumsy and ungainly with a fork and a knife. Various members of my family have tried to civilize me over the years; none have succeeded.
Then I came to India. What?! Why didn't I know about this sooner? You mean I can dispense altogether with the silverware, with these heinous implements that come between me and my sustenance, that deprive me of a whole additional sensory experience of the food -- its texture and warmth against my fingers — replacing it with a steely vicariousness? You mean I can cut the cutlery that cleaves the nexus between mouth and nutriment, that impinges on the organic electromagnetic field of my nourishment by introducing unnecessary disturbance-causing metals? You mean I can enter into direct communx with my meals?
Gastronomically speaking, I was in heaven.
When I got back from India to my parents’ house from that first visit (this was more than ten years ago) with whom I was living at the time, I continued to eat with my hands until one day my mother said, “you know, I don’t really like it when you eat with your hands.” I acquiesced, but my resolve to return to India strengthened.
